We've got super small bevels without a notch.

The last stage is honing and putting a very fine edge or bevel.

In the models subfolder, there is a beveled cube model called cube smooth.

My curiosity, drew me to journey in search of different kinds of bevels and led me into contact with many people.

So generally, Japanese sushi knives, called yanagi, designed to be a little bit thinner behind the blade, and has the bevel, which is much more elongated to kind of create a thinner blade and make it easier to slide through.
